Why Moms Will Love These Healthy Cookies
If your kiddos are ALWAYS hungry, you NEED this recipe in your life! With 4 kiddos in my house, 2 of which are growing, active boys, someone is always hungry! When I discovered Anytime Chocolate Chip Cookies, it was a game changer. I make at least one batch per week, and I store them in a decorative cake stand with a clear lid, right on my counter top. (This one is great because it is shatterproof! Ask me how I learned that I NEED a shatterproof cake stand!) I find that when they are easily accessible and in plain sight, they’ll help themselves rather than come ask me to help them find a snack. Many times I’ll go ahead and double or triple my recipe to freeze the extras for later. I just go ahead and press them out into cookie shapes, then store a gallon freezer bag. It’s so nice to have a batch ready and waiting during busy weeks.
The ingredients in this healthy cookie recipe are hard to beat. There is a serving of good fats found in the coconut oil. And more healthy fats and protein are found in the almond butter and almond flour. Farm-fresh eggs add little more protein to the mix, then I sweeten them with local honey and Stevia Leaf extract. There is even a little cinnamon in there for an antioxidant boost. With a line-up like these ingredients, I’m okay with my kids eating one of these healthy cookies just about ANYTIME!
Why Kids Will Love These Healthy Cookies
Well, the most obvious reason kids love these healthy cookies is because…they are cookies! They’re easy to grab, so no plate or fork needed. They’ve got just the right amount of sweetness, and they are perfectly soft and gooey. I even allow Anytime Chocolate Chip Cookies as a car snack because they make a minimal mess when eating them.
My kids also really love the fact that they know they don’t have to get permission to snack on one of these cookies. As the name implies, they can help themselves anytime they are hungry. My 12-year-old is almost impossible to get full at mealtime, so he often grabs one (or two!) of these cookies to add to his plate. I think he appreciates not having to dig in the pantry or hunt in the fridge to find something else to eat!
“Anytime” Chocolate Chip Cookie Recipe
INGREDIENTS:
- 1 cup almond flour
- 1 1/2 tsp cinnamon
- 1/2 tsp baking soda (aluminum free)
- pinch pink Himalyan salt
- 2 tbsp coconut oil (unrefined)
- 3 tbsp almond butter
- 1/4 cup honey
- 1/2 tsp vanilla
- 1 cup rolled oats (organic and sprouted are best)
- 2 eggs (farm fresh are best)
- 2 tsp Stevia (organic) (The best Stevia!)
- 1 cup chocolate chips (organic)
DIRECTIONS:
- Mix all ingredients well.
- Line cookie sheet with parchment paper. (Here’s my favorite, unbleached parchment paper!)
- Pat dough into cookie shapes (not into balls).
- Bake at 350 degrees for 12 minutes.
